The Caparsa estate uses only copper and sulphur products and no synthetic products are used. We keep the microclimate monitored constantly on our computer and therefore we intervene only when strictly necessary.
Cover crops are grown as a method of protecting the topsoil from erosion and it contributes to the microbiological life. We mow the grass in the vineyard 2-3 times every year.
It is an old natural fertilizing process. Every year we plough the soil and we sow plants that capture the atmosphere's nitrogen and fix it in the soil naturally.
Fertilization is made by "sovescio", as previously described, and with organic products.
The vineyards of Caparsa were planted in the 60's - 70's, like in most of Chianti. The vineyards are mature now, and give a wine of high quality and low production. |
