The wine should be served at no
less than 19° C to appreciate in full the power of the
tannins without any astringent sensation and at the same
time bring out its gentle aromas. The young wines up to about 7 years old should be decanted into a carafe to obtain a more harmonious wine. If the wine is older it is enough to open the bottle one hour before. For the best results the best shape glass is the Riedel tulip.
The Chianti Classico Caparsino wine and the Chianti Classico Doccio a Matteo wine are typical table wines. They are harmonious with Tuscan dishes: the good acidity cleans the palate with a persistent aroma. |
